12 Coffee Bean

Coffee Beans might rank low on this list due to their low selling price, but they should still be a staple for many farmers. In fact, Coffee Beans are somewhat of a crop apart from everything else due to their incredibly great utility. They're used to make coffee and eventually triple shot espresso, which provides a speed buff to the player and is extremely useful in dangerous dungeons like the Volcano or Skull Cavern.
In terms of pure profit, however, they're a hard pass. Coffee Beans will grow into a bush within ten days, after which they continue to yield crops every second day. The beans themselves can't be consumed.
11 Unmilled Rice

One of the cheapest spring crops to grow on Stardew Valley is "unmilled rice." These start out as rice shoots. Once planted, they have a turnaround time of eight days, and only six days when grown by a river or pond. It costs 40 gold to purchase these rice shoots.
The unmilled rice itself can sell for as little as 30 gold, and as much as 60 gold, so the profit probability is hit and miss here. However, players who take exceptionally good care of their rice can definitely come out ahead in the end. Just be sure to fertilize and water accordingly.
10 Tulip Bulb

Tulips are one of the many flowers players can grow in the game. As such, they don't make the best crop since they have a narrow utility. In fact, tulips are best used as gifts given to villagers, but even then, only Evelyn seems to really love these flowers, while the majority of the village simply likes them. Clint, George, and Sebastian dislike tulips entirely.
Tulips Bulbs cost 20 gold at Pierre's and 25 at JojaMart. They take six days to grow. While they can be eaten for a bit of health and energy, there's really no reason at all to invest in them due to their limited use.
9 Jazz Seeds

Flowers aren't out of the picture in Stardew Valley. Everyone loves to purchase flowers, whether it's for their sweetheart, or for landscaping reasons. This is where jazz seeds come in. In Stardew Valley, it's possible to purchase jazz seeds from Pierre for 30 gold (which is 7 gold cheaper than it is at JoJaMart.)
These flowers sell for at least 50 gold, but they can sell for as much as 100 gold. Plus, they're great to restore health and energy, and they're used in the "Lucky Lunch" recipe. Flowers make great gifts for villagers as well, raising that socialization bar high. Whether players sell these flowers or keep them for themselves, they are a reliable spring crop option.
8 Garlic

Italian food just isn't the same without this staple crop. In Stardew Valley, players can purchase garlic for 40 gold, then sell it for at least 60 gold, or 120 gold at maximum quality. The great thing about this crop is that it only takes four days to grow to its maturity.
This is also a great crop to keep as well. Players can make "oil of garlic" with this crop, which sells for 1,000 gold! Players can drink the oil of garlic to help keep pesky insects and critters away in the mines. This lasts for up to 10 minutes and it can keep floors from unannounced infestations. There are many benefits to growing this spring crop, so players can't go wrong with this one.
7 Parsnip

These are one of the most basic spring crops around, but they're cheap and they're guaranteed to at least give players a 10 gold profit. Plus, they mature quickly, only taking four days to reach their harvest day. Parsnips are also great because they're diverse for cooking. Players can use parsnips to make a Farmer's Lunch, Parsnip Soup, and to help fill the Spring Crops and Quality Crops bundles at the Community Center.
It sounds basic, but it's important to get those crops bundled as quickly as possible. Otherwise, it won't be available again until the next growing season. Oh, and for those who want to be friends with Pam, beer isn't the only way to her heart. Try giving Pam a parsnip and see how she responds!
6 Potato

Not many people dislike potatoes. A surefire way to make a profit during the spring in Stardew Valley is by planting this favorite root vegetable. These are available for 50 gold (which is 12 gold cheaper than JoJa Mart, which is all the more reason to support small businesses!)
Potatoes can sell for as little as 80 gold, or as much as 160 gold. They mature in just six days, and they're used to make hashbrowns which help produce lots of heat and energy. Potatoes are by far one of the best spring crops both in real life and in the game.
5 Kale

It's definitely not everyone's favorite vegetable, however, in Stardew Valley, kale is actually a very profitable crop. It sells for 70 gold at Pierre's and 87 gold at JoJa Mart, and it can be sold anywhere between 110 and 220 gold depending on its quality.
Kale is also a very healthy crop, providing plenty of energy and health to players. Plus, it can be used in salmon and stir fry to really strengthen its nutrition. Even players who won't touch kale in real life can benefit from its in-game usage.
4 Green Beans

Crops that consistently produce are ideal. The good news about green beans is that players don't just harvest them once. Every three days, green beans regrow, so the investment lasts long-term.
It takes 10 days for a green bean plant to grow, and it only costs 60 gold to buy a plant at Pierre's. Again, JoJa Mart is way too overpriced, so don't waste any time there. Just be careful when gifting these veggies, as most villagers are not a fan of them.
3 Cauliflower

While cauliflower plants take a bit longer to mature, (up to 12 days), they're well worth the wait. Players can buy these plants for only 80 gold at Pierre's, and the plants themselves will sell for as little as 175 gold. A high-quality cauliflower plant brings up to 350 gold!
Maru loves these plants, and the "Cheese Cauliflower" recipe is to die for. Players definitely need to put a few of these back for special occasions. Their profit is so high that it's feasible to do so!
2 Rhubarb

It doesn't seem like anyone really eats rhubarb. Most people barely even know what it is. However, in Stardew Valley, villagers seem to love it. It's inedible on its own, but it can be used as Rhubarb pie which is a pretty safe gift bet within the village.
This crop is a bit more expensive. It costs 100 gold, but it can sell anywhere from 220 gold to 440 gold, It takes 13 days to mature, but the profit is definitely worth it. Buy a bunch of these suckers and watch the gold stack up!
1 Strawberries

Now for the best spring crop on the farm, strawberries! It's no surprise that these sweet delights are the top spring crop around. These cost 100 gold at the Spring Festival, and they sell for anywhere between 120 gold and 240 gold.
The best part about these fruits is that, like green beans, they regrow. Every four days, players get more farm-fresh strawberries to sell (or eat). Planting and taking great care of strawberries is the best way to make a spring crop profit on Stardew Valley.
