Although it never saw the light of day, you can add the pinball genre to the aforementioned list; the studio has unveiled one of its canceled titles, 1080Pinball, which promised to deliver "the most realistic pinball simulation ever."
Clearly not confined to the types of genre the developer usually produces, Insomniac Games lifted the lid on 1080Pinball via their Facebook Timeline. Work on the project began during January 2007 to which Insomniac hoped it would be crafted into a game that would offer "the most realistic pinball simulation" in the deserted genre.
In what turned out to possibly inspire the game's name, the canceled downloadable title was capable of displaying 1080p visuals at 60 frames per second. 1080Pinball's features included table friction, gravity, and simulating the weight of a ball. Insomniac also revealed that the pinball game had been designed in a way where a progression system such as the one present in Gran Turismo had been implemented. Furthermore, tables influenced by "some of the greatest tables ever made" were integrated too.
Based on the batch of concept art pertaining to 1080Pinball, which can be viewed below, it's evident that the game was set and inspired by space.

Without providing any reasons as to why 1080Pinball was canned, Insomniac decided to abort the project in mid-2007. However, a potential reason behind the pinball game's cancellation could have been a shift of focus onto PlayStation 3 exclusive Ratchet & Clank Future: Tools of Destruction, which released later during the fall. Other titles that were being developed in 2007 were Ratchet & Clank Future: Quest for Booty and Resistance 2; both released the following year.
Insomniac has promised to go into depth regarding the now-canceled project in their upcoming episode of the Full Moon Show audio podcast.
It's certainly a disappointment that 1080Pinball was canceled; it had everything going for it - a promising concept, affordability due to being downloadable, neat and intriguing features and Insomniac at the helm.
